Mauricio Shattah is an innovative producer who we've been working with for many years. Maurcio's farm, Finca La Negrita is located in Tolima, Colombia and is home to some of the most sought after coffee varietals - including from Mokka, Sudan Rume and Gesha amongst others. It is where he combines his love of post-harvest processing with his scientific knowledge, producing coffee that is exceptional and has become recognised around the world.

This coffee is his Mokka, and one of the smallest beans we've ever roasted. Once picked, whole cherries are placed in to a sealed stainless-steel tank. The use stainless-steel tank is then flushed with nitrogen, which allows Mauricio and his team control over the fermentation, as it creates an environment to avoid lactobacillus bacteria growth, whilst creating complexity in the final cup. The coffee undergoes a total fermentation time of 24 hours.

In the cup you'll find flavour notes of strawberry jam, shortcake and raspberry syrup. It has fantastic clarity and a medium to light weight.

Specific Coffees

We're here to celebrate the world of coffee and the many different regions, varietals and producers. Each month the coffee we source and roast will be different from the last.

Coffee Information

Each coffee is unique and we love to tell the story. Whether it's the growing conditions, the roast profile or varietal each has a role to play in the final experience. So all of the coffee information for each coffee will be available on our Release Info page each month, where you can also look back at coffees gone by.

Limited Supply

Each of the coffees in this subscription come in extremely low quantities. We have to limit the amount of subscriptions we can offer. If the subscription is sold out, it will only become available once another slot is vacated.

Roast Date

Each batch of coffee is roasted the week before dispatch (the last week of the month). This allows the coffee to rest to the point at which we consider it at its peak when delivered.

Shipping & Dispatch

The subscription is set to dispatch on the 1st Monday of every month, or the next working day. For the UK we use Royal Mail, which is included in the subscription. For outside of the UK we use a tracked international service, at an additional cost, which will be added at checkout.

The cut-off deadline is the 11:59pm day prior to dispatch.
