Zarza is a 6.5-hectare farm in Pitalito, Huila, shaded by walnut, cedar, and guayacán trees at 1,540 meters above sea level. This is where Alejandra Muñoz - who once ran a small burger shop in her hometown - now channels her energy into coffee, working alongside her husband Jhonatan Gasca.
This washed Pink Bourbon begins with a careful selection of ripe cherries. After a 24-hour oxidation, the cherries undergo anaerobic fermentation - first in cherry for 24 hours, then again post-depulping for 32 more. A thermal shock helps remove mucilage before the beans are fully washed with spring water. Drying takes place over 6–8 days, with frequent turning for even results.
In the cup you'll find flavours of blackcurrant candy, strawberry and peach.

Important Information
Roast Date
We roast coffee every tuesday. If ordered before 11:59pm on a Monday, then it will be dispatched that week. If ordered after, then it will be roasted the following week. This is to ensure the coffee arrives at its freshest.
Shipping & Dispatch
For the UK we use Royal Mail. For outside of the UK we use a tracked international service. If you're UK-based, there is free shipping over £25.
The cut-off deadline is the 11:59pm day prior to dispatch.
