Mikava has gained acclaim throughout the world of coffee, winning national and international competitions. The coffees grown by Paul Doyle and his team are phenomenal and we were lucky to have cupped these lots on the farm earlier on in the year.

This lot is from one of their two farms, Santuario, which is located at 2,000 meters above sea level. Once picked it undergoes a natural carbonic maceration process. Once the cherries are picked, they are placed in seal tanks, the tank is then injected with CO2 and then monitored for PH and temperature throughout the fermentation process. Once finished, they are then transported to Marsella, the other farm, and dried using a solar dryer, for as long as 60 days or the ideal moisture content is reached.

In the cup, you'll get a complex and layered flavour profile reminiscent of lemon/lime, mango, pineapple, plum and some florality - an outstanding cup of coffee.
