This gesha was grown in over 2000m above sea level in a valley where the lot only gets couple of hours of sunlight per day and where the cool winds influence the growing cycle. These slow down the cherry maturation, which helps to build up more sugars in the seeds for more flavour complexity and sweetness. \u003cbr\u003e These are intensified by Mauricios intentional fermentation, where he first cleanses the cherries to remove any yeast or bacteria, followed by placing the cherries into a fermentation tank and innoculating with bakers yeast. This helps to kick start the fermentation and allows more control. Mauricio also flushes the tank with nitrogen to reduce astringency and to have more sweeter final cup. \u003cbr\u003e\u003cbr\u003eThis particular lot 21 is also considered as one of Mauricios competition lots.
