Inmaculada Coffee Farms often need very little introduction, known around the world for producing some of the more rare and exciting coffees, including this Rume Sudan, as well as Gesha, Eugenioides and Laurina.

Once picked the coffee is floated, to remove unripe cherries and then an initial hand sorting. It then undergoes a carbonic maceration, being sealed in tanks at 20-22 degrees centigrade for 5-6 days. Once ready to be dried, it is transferred to Nuna drying boxes for 48 hours without moving. The final stage of drying is 15 days in a controlled environment, where it is turn 3 times per day.

The Rume Sudan varietal was discovered in Sudan, near to the border with Ethiopia and is known to have a large, long bean shape. It is a very unique and rare coffee varietal with an outstanding flavour profile, which is unlike other coffees. Its a balance of fruit-forward, herbal and floral notes, including blueberry, lychee and red apple.
