Lost Origin is a coffee processing lab based in Panama City. This year we had the pleasure of visiting Franz, one of the owners, who walked us through the set up. Based in the connecting unit to their brewery, they purchase cherry from farms in Boquete and process it in their own unique way, often utilising methods involving yeasts.
In Franz's own words here is how he describes the process for this lot:
"Lot 071 corresponds to our second time working with Berlina Estate. Harvested in late January, cherries were depulped and later fermented under 10 psi of pressure. A mixed culture inoculum composed of Kveik Voss, along with Torulaspora delbrueckii, P. kluyveri, and Lactobacillus plantarum were selected to create a competitive fermentation environment. Following a 5-day fermentation, coffee seeds remained in our drying rooms for 19 days, until reaching desirable quality parameters."
In the cup this results in a clean cup. It has a flavour notes of soft stone fruit, like peach, floral and panela. It is sweet, light and syrupy.
