For this months subscription coffee we look to Panama and the team at Creativa Coffee District (CCD). It is a Geisha from a third-generation producer, Luis Chavarría.
Once the coffee is harvested, it is sent to the CCD mill for processing. Here the coffee undergoes an anaerobic fermentation processed called 'Dynamic Cherry' where the key step is when the Geisha cherry spends 58 hours fermenting in tanks, promoting the growth of yeasts and lactic acid bacteria.
This results in a coffee that is intense, layered and fruit forward. It was chosen for the subscription due to it's complexity. In the cup it has flavour notes of blackcurrant, pineapple, kiwi, strawberry and orange. It is sweet, and juicy.
