Country of Origin: Malaysia
Species: Liberica
Process: JL Dark Room Natural
Altitude: 40-60masl

This is a special release for us: the first Liberica we've ever purchased, and a tiny lot of just 5kg green.

Liberica makes up only around 1% of global coffee production, but it's getting serious attention. Competitors in the coffee championships are using it to showcase flavour profiles we haven't tasted before, and we wanted to see why.

This lot comes from My Liberica in Malaysia, where Jason Liew and his team are experimenting with processing and unlocking what this species can do. Liberica thrives at altitudes as low as 40-60 metres above sea level, far below Arabica, and grows into a much taller plant with broad, thick leaves that help protect it from pests and disease. That resilience makes it an exciting option for the future of coffee production.

Liberica is distinct from Arabica, with high natural sweetness and very little bitterness. For this lot, My Liberica inoculated the coffee with selected specialty cultures and fermented it for 10 days, then dried it as a natural in a dark room with controlled humidity and temperature. The result is complex, tropical and incredibly sweet.

The seeds are also much larger than Arabica's, and it took us over a month to find the right roast profile for it.

In the cup, we found flavour notes of carambola, jackfruit and cognac.
