Jose Padilla and Gonzalo Hernandez founded Coffea Diversa Suchitan by bringing coffee seeds from the original Coffea Diversa Botanical Garden in Costa Rica to Guatemala. Coffea Diversa's private collection is home to 850 coffee botanical variants specimens, of which they produce micro-lots of approximately 25 different varietals. 

Their philosophy is to emphasise genetic diversity by planting small plots of rare variants in a fixed terroir, ensuring unique taste profiles based on genetics rather than geography. With the goal to enhance coffee sustainability by avoiding genetic uniformity.

Felipe Contreras of Finca Gascon, introduced the project to Special Guests and has been helping Coffea Diversa with processing. This lot is their 'winey' process, where the coffee undergoes 24 hours of oxidation in the bag after harvest. Then through an anaerobic fermentation that last 48 to 96 hrs depending on the variety - this lot, their Typica Xantocarpa, was 72 hrs.

In the cup you'll get flavour notes of blackcurrant, cranberry and pomegranate.

Important Information

Roast Date

We roast coffee every tuesday. If ordered before 11:59pm on a Monday, then it will be dispatched that week. If ordered after, then it will be roasted the following week. This is to ensure the coffee arrives at its freshest.

Shipping & Dispatch

For the UK we use Royal Mail. For outside of the UK we use a tracked international service. If you're UK-based, there is free shipping over £25.

The cut-off deadline is the 11:59pm day prior to dispatch.
