For our 2nd birthday at Aybrook Street, we wanted to celebrate with something special: two exceptional geishas from one of the most famous farms in the world, Hacienda La Esmeralda.

Both come from their Cañas Verdes farm, from the Trapiche lot. The name comes from the trapiche, a mill traditionally used to process sugar cane into panela (known locally as rapadura) — a nod to Cañas Verdes' history as a sugarcane-growing region.

We wanted this birthday box to showcase how much processing alone can shape a coffee, so we picked two lots from the same farm, same variety, side by side.

The washed lot is a classic expression of Hacienda La Esmeralda's geishas: floral, citrus-driven and finishing with a long, sweet aftertaste. It's coded 7FB - picked over 7 passes, washed, and dried on raised beds.

The natural lot stood out on the cupping table for its complexity - orange marmalade and strawberry, with an intense peach note through the finish. It's coded 4ANC - picked over 4 passes, anaerobic natural fermented, and dried in a temperature- and humidity-controlled cold room.

In the cup, we found flavour notes of lemon ice tea, jasmine and orange blossom for the washed lot, and peach, marmalade and strawberry for the natural lot.

Important Information

Roast Date

All of our coffees are roasted on Loring coffee roaster each week on Tuesday before dispatch on Wednesday. We recommend resting our coffees for at least 3 weeks for the best results. Please note this can also mean you may receive coffee that has gone through a resting period.

Shipping & Dispatch

We dispatch all of our orders on Wednesdays. For the UK we use Royal Mail 24h service. For outside of the UK we use a tracked international service, at an additional cost, which will be added at checkout.

The cut-off deadline is the 11:59pm on Mondays.
