Mauricio Shattah is an innovative producer who we've been working with for many years. Mauricio's farm, Finca La Negrita is located in Tolima, Colombia and is home to some of the most sought after coffee varietals - including from Mokka, Sudan Rume and Gesha amongst others. It is where he combines his love of post-harvest processing with his scientific knowledge, producing coffee that is exceptional and has become recognised around the world.

This coffee is his Typica Mejorado. Once picked, whole cherries are placed in to a sealed stainless-steel tank. The use stainless-steel tank is then flushed with nitrogen, which allows Mauricio and his team control over the fermentation, as it creates an environment to avoid lactobacillus bacteria growth, whilst creating complexity in the final cup. The coffee undergoes a total fermentation time of 48 hours.

In the cup you'll find flavour notes of mango, cherry and pineapple. It is highly complex, has fantastic clarity and a medium weight.

Important Information

Roast Date

All of our coffees are roasted on Loring coffee roaster each week on Tuesday before dispatch on Wednesday. We recommend resting our coffees for at least 3 weeks for the best results. Please note this can also mean you may receive coffee that has gone through a resting period.

Shipping & Dispatch

We dispatch all of our orders on Wednesdays. For the UK we use Royal Mail 24h service. For outside of the UK we use a tracked international service, at an additional cost, which will be added at checkout.

The cut-off deadline is the 11:59pm on Mondays.
