Sourced on our latest trip to Panama, this coffee comes from the Lost Origin Coffee Lab in Panama City.
Starting out as a brewer, Franz, began experimenting with coffee only a couple of years ago by buying coffee in cherry from some of the best farms in Panama and processing them at his own lab in the city. Since then he has won accolades around the world, including placing in the Best of Panama competition and one of his coffees was used to win the World Brewers Cup.
For this coffee, MAYA_GEIS_117_180, after picking the cherry was placed in a refrigerated lorry and driven to the lab. Here, the process included a fermentation was carried out in custom-built stainless steel tanks, guided by LOY-007 and LOB-001, with the help of a fermentation medium (LOM-111). It was then dried in temperature controlled rooms.
In the cup you can expect flavour notes of plum, maraschino cherry and rhubarb.

Important Information
Roast Date
All of our coffees are roasted on Loring coffee roaster each week on Tuesday before dispatch on Wednesday. We recommend resting our coffees for at least 3 weeks for the best results. Please note this can also mean you may receive coffee that has gone through a resting period.
Shipping & Dispatch
We dispatch all of our orders on Wednesdays. For the UK we use Royal Mail 24h service. For outside of the UK we use a tracked international service, at an additional cost, which will be added at checkout.
The cut-off deadline is 11:59pm on Mondays.
